Crush City x Trem Listening Party

Late last month Crush City held well executed listening party for Trem's FTTOHNL. Although the album only had a few spins in its entirety it didn't put an end to the vibe, DJ's dug out them gems!!
Ironlak writers got the job done and did what they do best too. Here's a few flix from the day. I hope to put together a short video of the day however it seems a recent mac update has kindly bent my master suite over and given the serials the old rogering if you catch my drift.

Fuck Ashtray Day Snags Cook Leftover Samosas

Fuck snags (Yeah I said it!) we're making Samosas mother fucker! eating these delights with beer or rum is too damn good!
Don't you dare question my patriotism either you fucking shit khunts. My devotion to this great land runs deeper than your putrid southern cross boob jobs and unit stickers on the back of your non utilised utes.
OK...Fuck all the BS. Let's meet halfway with this recipe and do what Sam Kekovich says and "cook lamb" for this or some shit. You can use any fresh cut meat leftovers really.

You need:






- Lamb or some other dead meat
- Onion diced
- 2 clove garlic diced
- Carrot diced
- Potatoes diced
- Peas
- Garam Masala Spice (1 teaspoon)
- Ground Cumin Spice (1 teaspoon)
- Paprika or Chili Powder (1 teaspoon)
- Gor-Met stock or just some salt (half teaspoon)
- Half cup of water
- Puff Pastry Sheets
- 2 eggs (lightly beaten)

Check the technique :

- Heat up some oil in yo skillet
- Chuck in your garlic and onion and fry off until its soft, slightly coloured and smell good.
- Throw in all them spices apart from the gourmet stock.
- Brown the lamb.
- Carrots and peas, potato go in for 3-4 mins or until slightly. (nuke prior if you like)


- Little bit of water to spread it out, bring to boil and let it thicken. Don't over cook your meat!
- Put your meat mix on you pastry, fold it, brush some egg over the pastry.
- Bake them joints on around 180 dz for about 10-15 or until shits nice and brown like the pic.

Bronson in the kitchen

Contrary to what the title may suggest, this entry in not about cooking down a brick at a crack spot but it's given me an idea for my next entry. Its seems that I'm not the only rap mercenary with sought after culinary skills. This portly chap knows his way round the burner (not the one the hip). These ain't no Vic Lo Jail recipe shits, no disrespect to his recipies but these are some gor-met typa ish, recipes that (as Action puts it) are "panty droppers". Now who ain't down for that?!?. Real recognize Veal.

Gune Grub Tuesday



Once again this is a cheap meal that wont cost you much more than $10 for the basics.
A simple alternative to a chicken schnitzel using Japanese Panko crumbs.
If you like all them chicken rolls from the sushi joints you will like this.

Ingredients :



- 2-4 Chicken breasts.
- 1 pack of Panko crumbs. (buy these in the ashen section of woolies)
- Few sprigs of parsley
- Olive oil
- Salt and Pepper
- Parmesan Cheese
- Eggs
- Flower

Sauces
The tomato sauce goes good on some mash. The other is the same as the sauce they serve with the Ebi Fry Prawn roll at sushi station.



Cherry Tomato Sauce

- Half punnet of Cherry Tomatoes
- 2 clove of garlic
- 1 teaspoon of chopped basil
- Squirt of Dead horse
- Olive oil
- Salt and Pepper

Tangy Mayo Curry Sauce

- 1 part Mayo
- 1 part Dijon mustard
- 1 Teaspoon curry powder (depending on how much sauce you put in)
Mix that shit!


Chicken

-Dice up you parsley and add it to a few cups of panko on a plate/
-Cut open you chicken breast, cove with cling wrap and bash the dirty bird with a mallet or your fist until the breast is about 1cm thick then season with salt and pepper both sides.
-Cover breast in flower, dip in egg and let the excess egg run off. Then place into the plate of panko covering it as much as you can.
-Sprinkle some Parmesan on both sides
- Shallow fry in some oil for a few minutes either side.





Sauce

-In a small saucepan as some oil and crush 2 cloves of garlic and cook off on a medium heat.
-Add cherry tomatoes and cook with lid on shaking occasionally until tomatoes pop (approx 5 minutes)
-Remove from heat and mash up seasoning with Basil, salt and Pepper.
-Add a squirt of tomato sauce and simmer for a couple of minutes.




Still waitin on that New Orleans chicken Mr Kongo!!

Gune Grub Tuesday

I ain't no fucking master chef and I ain't claim to be, but I've found some simple recipes online and in books which I regularly use adding a few basic spices or sauces to get my desired liking that I'd like to share. All of these are simple as shit with fuck all preparation time.



Today's recipe is an easy lamb marinate. I generally use this on cutlets but I guess you could use it on a rack, chops or a roasting cut.

Ingerdients:

1 x Tablespoon of Balsamic Vinegar
2 x Teaspoon of Ground Cumin Seed
1 x teaspoon of Keens Mustard Powder (this is something I've added to the orignal. You can use mustard paste/sause if you like)
2 x Decent Teaspoons of honey ( I think the original is one, two take away the acidity of the vinegar.
A few cracks/shakes of salt & pepper.
A couple of sprigs of fesh mint finely diced. (if available)
2 x teasoons of mint sauce. (add this along with the fresh mint or if you aint got fresh shit growing use the mint sauce)

Marinate your cut. The longer you leave it the better and more tender it will get.
I cook cutlets in a fan forced oven, on a roasting rack at around 180 for approx 8-10each side, basting each flip with the leftover marinate. If your cooking chops finish them suckers off under the grill and make that fat and gristle crunch.

Serve with whaterver the fuck you want. Gangsta gone eat some son!
